HOW TO CREATE A CLASSY WHITE CHEESE PLATTER

This classic white platter is the dream spread for a fresh, alfresco aperitif. I played with white and green, leaving room to include many delicious kinds of cheese, sweets, and fresh fruit and herbs. You’ll see I included a number of my favorite cheeses, like goat cheese, goat brie, and mozzarella. Surrounding these savory snacks, I placed bright green grapes, sprigs of fresh basil, white chocolate-covered pretzels, strawberries, and wafers.

 In the center of the platter is one of my favorite recipes: ricotta crostini. Creamy, crunchy, irresistible. The recipe is simple and will keep your guests reaching for more: 

  1. Cut a French baguette and place it into the over for 5 minutes at 350F.
  2. Once the bread is out of the oven, spread the ricotta on top and add one large pecan and a drizzle of honey.

I like to leave a small cup of extra honey on the plate, both for color and a bit of extra sweetness if you or your guests so desire.
