LET’S MAKE A BELLINI COCKTAIL TOGETHER!
The Bellini. This world-famous cocktail’s history stretches back to Italy in 1948. More specifically, the Bellini was invented by Giuseppe Cipriani, founder of Harry’s Bar in Venice. It’s said that the drink was named “Bellini” because the pink hue reminded Cipriani of a 15th-century painting of a saint, created by the Venetian artist Giovanni Bellini. At that time, the drink included just three ingredients: prosecco, white peach puree, and a few drops of raspberry juice to create that famous pink color.
Today, the drink can be made with white or yellow peaches, and it’s not as common to add raspberry juice for color (the yellow peaches help to create a pink/orange effect!) The modern Bellini is also a bit lighter—yet still uncomplicated—as sparkling water is added as a third ingredient.
As explained above, you just need three simple ingredients to make a delicious Bellini:
- Prosecco
- Peach puree
- Sparkling water
The key to this recipe is to mix equal parts so all ingredients are in thirds no matter the amount of servings you are making: ⅓ Prosecco, ⅓ peach puree, and ⅓ sparkling water. As I mentioned, the recipe calls for white peaches but you can always use yellow peaches as well, just like I did for this recipe. The taste is just slightly different but the effect is equally delicious. This bubbly, glitzy, and refreshing drink is a tantalizing take on cocktails for summer parties and an ode to a true Italian classic.
BELLINI
Ingredients
- 1 Bottle Prosecco
- 4 Cups Peach Puree
- 1 Bottle Sparkling Water
- 1 Lemon
Instructions
- Cut and slice the peaches and put them in a blender.
- Cover and blend on high speed for 1-2 minutes until smooth.
- Squeeze the lemon.
- Pour into glasses: 1/3 of peach puree, 1/3 Prosecco, 1/3 of Sparkling Water.
- Add a few drops of lemon juice (optional).
- Stir and serve chilled.
